1.MÀU SẮC VÀ MÙI MỰC
Mực khô tươi ngon thường có màu đỏ vừa phải, tươi tắn, không quá đậm. Phần đầu và thân mực dính liền với nhau, không bị rơi, không bong. Mực khô Cô Tô chuẩn có màu hồng nhạt, trên thân mực còn nguyên những chấm hồng nhỏ li ti. Đó gọi là “nháy mực” thể hiện độ tươi trước khi mực được phơi khô.
Mực Cô Tô ngon có mùi thơm của thịt mực chứ không có mùi tanh hôi của hải sản ươn, mùi này chỉ thoang thoảng chứ không hề nồng nặc.

Thông thường, mực tươi ngon phơi khô sẽ có 1 lớp phấn trắng bám trên thân, tuy nhiên lớp mực này không hề bám dày quá, sờ lớp phấn vẫn dính tay nhưng không đáng kể. Một số loại mực kém chất lượng, đánh bắt kèm cả tôm, cá… nếu không có nắng họ tẩm qua muối và một vài chất để chống ruồi muỗi trong thời gian dài mới về bến rồi cho lên phơi có lớp phấn bám cực dày, đó thực ra là do loại hoá chất bảo quản theo thời gian hình thành. Mực không còn màu như lúc tươi, râu mực thâm đen và không được đều màu như mực Cô Tô.
Thân mực thẳng, đầu và thân mực dính liền nhau, một số loại mực kém chất lượng thân và đầu rời nhau, râu mực mềm và nhỏ không hề quắn hay xù mốc. Khi dùng tay ấn vào thì mực không bị dính tay, không cảm nhận được độ ẩm, tay khô ráo.
3.PHƯƠNG PHÁP PHƠI MỰC KHÔ CÔ TÔ NGON
